This was our Friday night pizza. I started with a recipe I found online.
Cheesy Zucchini Pizza That Will Rock Your Face — Eat, Live, Run
I made some modifications, of course. I salted my zucchini after shredding it, and let it sit for 30 minutes in the colander to drain.
I substituted goat cheese w/ pimento for the ricotta cheese (because that is what I had).
I also added some extra mozzarella cheese mixed with bread crumbs and Italian seasons on top.
Brian and I liked it a lot, but the kids weren't that excited. Can't win them all - still a great one to have when zucchini season is upon us!
Which might not happen given the weather we've been having...this may be the first summer in a long time that I have to buy zucchini.
