Summer cooking

Since I have summers "off" I tend to get fancier when I have friends over for dinner.
When my pal Tina came for a visit I had to do something good - I want her to come back! Tina is mostly vegetarian, but she will eat shrimp, so I did some marinated shrimp on the grill, made a goat cheese tart, and then a mixed green salad with roasted beets and marinated feta cheese. We all laughed because I never made a goat cheese tart before, and I always try something new for company - never knowing if it is good or not! I'm adventurous that way. The tart was good - think a savory cheesecake. Not something to have all the time, but good with the beet salad for sure. We polished off a whole loaf of french bread also, and I had out some dipping sauces of cherry balsamic vinegar and lemon olive oil (bought at Living in the Garden). Don't forget the Prosecco (Italian champagne)! It was a very nice time.

The dinner was FANtastic! Thank you again, Connie, and--no worries--I will always come back. By the way, after everyone else was done, I went back and ate every single beet out of that salad. DELISH!
