This weekend was the Lentil Festival - it marks the end of summer and the beginning of school. We had a good weekend, and ironically it was one of the warmest weekends of the summer. Nice, mother nature, rub it in. I have a part time job running an intervention study for WSU, so all is well for the fall semester. To celebrate, we made a batch of delicious lentil brownies. No, really - they are good!
I modified the following recipe from the USA Dry Pea & Lentil Council.
2 eggs, 1/2 cup of egg beaters
2 cups of sugar (normally I substitute half Splenda but I was out)
1/2 cup of vegetable oil
1/2 applesauce (replacing 1/2 oil)
2 tsp vanilla
1 1/2 cups flour
1/2 + 2 Tbl cocoa powder
1 tsp salt (I forgot this!)
2/3 cup chocolate chips
1 cup of cooked lentils (I used the red kind)
Heat oven to 350. In a blender put lentils and the oil, blend until smooth. Beat the eggs & sugar, then add the lentil mixture, applesauce and vanilla. Stir in the dry ingredients, mix well and add the chocolate chips. Bake in a greased 9 x 13 pan (I accidentally used a 9 square and mine were thick!)
for 35 minutes.
